Job Description
We are seeking a dedicated and passionate Assistant Winemaker to join our team at a regional winery near Cairns, Queensland. This is an exciting opportunity to contribute to the production of high-quality wines, working closely with our Head Winemaker. You will be involved in all aspects of wine production from grape reception through to bottling, gaining valuable hands-on experience in a dynamic and supportive environment. This role is ideal for someone looking to grow their career in winemaking with one of Australia’s most prestigious wine companies.
Key Responsibilities
- Assist the Head Winemaker with all winery operations, including crushing, pressing, fermentation management, racking, filtration, and blending.
- Monitor fermentation kinetics, temperature, and specific gravity, performing necessary adjustments.
- Conduct laboratory analyses (pH, TA, SO2, volatile acidity) and maintain detailed records.
- Operate and maintain winery equipment, ensuring proper sanitation and hygiene standards.
- Participate in sensory evaluation and quality control throughout the winemaking process.
- Manage cellar operations, including barrel work, tank management, and inventory control.
- Assist with bottling preparations and operations.
- Ensure compliance with all health, safety, and environmental regulations.
- Contribute to continuous improvement initiatives within the winery.
Required Skills
- Proven experience in winery operations or a relevant viticulture/oenology background.
- Strong understanding of winemaking principles and practices.
- Proficiency in basic laboratory techniques and equipment.
- Ability to operate and maintain winery machinery.
- Excellent attention to detail and strong problem-solving skills.
- Physical fitness and ability to perform manual tasks associated with winemaking.
- Effective communication and teamwork abilities.
- Willingness to work flexible hours during vintage periods.
Preferred Qualifications
- Bachelor's degree or diploma in Oenology, Viticulture, Food Science, or a related field.
- Prior experience as a Cellar Hand or Assistant Winemaker.
- Forklift license.
- Knowledge of Australian wine regions and varietals.
