Job Description

We are seeking an experienced and dynamic Bar Manager to lead our beverage program and operations at The Mildura Riverfront Hotel & Bar. The ideal candidate will possess a deep knowledge of mixology, spirits, wines, and craft beers, coupled with exceptional leadership and customer service skills. This role involves overseeing all aspects of bar management, including staff training, inventory control, menu development, and ensuring an unparalleled guest experience. You will be instrumental in maintaining our high standards of quality, efficiency, and profitability, while creating an engaging and inviting atmosphere for our patrons.

Key Responsibilities

  • Manage daily bar operations, ensuring smooth service and high standards of cleanliness and presentation.
  • Recruit, train, mentor, and supervise bar staff, fostering a positive and productive work environment.
  • Develop and update innovative cocktail menus, wine lists, and beverage selections.
  • Monitor inventory levels, manage stock ordering, minimize waste, and conduct regular stocktakes.
  • Oversee cash handling procedures, manage floats, and ensure accurate POS system operation.
  • Maintain compliance with all relevant health, safety, and liquor licensing regulations.
  • Handle customer inquiries and complaints professionally, ensuring guest satisfaction.
  • Implement promotional activities and events to drive bar revenue and customer engagement.
  • Collaborate with the management team to achieve overall business objectives and financial targets.
  • Ensure consistent delivery of high-quality beverages and exceptional customer service.

Required Skills

  • Minimum of 3 years of experience in bar management within a high-volume hospitality environment.
  • Extensive knowledge of spirits, wines, beers, and classic/contemporary cocktail preparation.
  • Proven leadership abilities with experience in team supervision, training, and development.
  • Strong understanding of inventory management, cost control, and financial reporting.
  • Excellent communication, interpersonal, and problem-solving skills.
  • Ability to work flexible hours, including evenings, weekends, and public holidays.
  • Current Responsible Service of Alcohol (RSA) certificate.

Preferred Qualifications

  • Formal qualification in Hospitality Management or a related field.
  • Experience with POS systems and bar management software.
  • Advanced cocktail creation and presentation skills.
  • Wine knowledge (WSET or equivalent) or Cicerone certification.
